Domus Hyblaea

Fantastic staff, starting with the super Cinzia and the amazing Daniele, the resort’s master chef. Our only regret is we couldn’t stay longer and experience Saturday pizza night. Palazzolo itself is lovely and you are just a 45 minute drive through the lovely countryside to such towns as Noto, Modica, Ragusa and Siracusa.

It didn’t take very long for us to form a lasting impression of this place. Arriving after dark on a Friday evening and parking in the ample parking space adjacent to the entrance, we are warmly greeted by Daniele, who took care of every single detail of our short stay. After a refreshing shower, we made our way to the restaurant, beautifully appointed and with an open kitchen for us to view what was going on. As usual, the menu was supplemented by daily specials, and we dipped in and out of both, ending up tasting at least seven different dishes all prepared and served single-handedly by Daniele. They rear the famous Suino Nero on the premises, something we were lucky enough to experience firsthand the following morning. Their hams, salamis and lardo made excellent accompaniments to both our dinner as well as breakfast, and the attention to detail lavished on the dishes is evident everywhere else you look around. Their home-made wine and olive oil hold their own out against some of the very best in the region, and are hundred percent organic, of course. After a restful sleep, we had a stroll around the entire property, walking past the scattered suites, 10 in all and eventually arrived at the pool area, set on raised ground with beautiful views of the surrounding olive groves in the countryside. A very short visit, unfortunately, but enough for us to decide this is a place that we will want to come back to. This especially after meeting the lovely owners, Paolo and Graziella, and realising how much love these two wonderful people have put into setting up Domus Hyblaea

Very nice location surrounded by nature and sun in the middle of the countryside. Lovely room, good breakfast, very kind staff especially Cinzia. I would suggest a buffet breakfast a bit more intercontinental. Private car parking but I would suggest more street signs about the location.

This resort is run as a top notch family run establishment. We called ahead and they arranged transportation right from the Catania airport for us. We enjoyed our time here. Daniel was fantastic to deal with. He brought us whatever we needed. The food was all homemade and was so delicious. The pool was fantastic. Everyone was so friendly. Thanks for the great stay. We used the oil and vinegar we got from them every day on our ride for lunch. They even sent us off with a beautiful picnic lunch on our first day of riding. Thanks to all the staff at this resort.

We arrived on a rainy afternoon in February & the delightful staff & the owners themselves greeted us with typical Sicilian hospitality……lovely food & wine & a warm welcoming spacious room. When the rain settled & the sun came out, we could really see the splendor we found ourselves in. Olive trees as far as the eye could see & little cottages & rooms scattered amongst the green landscape. A landscape dotted with “ free roaming” Neri Siciliani pigs, which are reared with great organisation in the farm part of the resort. This resort is a work of love for the land & a heart full of hospitality. We will definitely be back.

Fantastico soggiorno in una location incantevole. Gentilezza e professionalità dei proprietari, creatività dello chef... Località strategica per raggiungere tutti i luoghi di interesse nei dintorni. Per il relax, le colline con la tipica vegetazione siciliana fanno da cornice alla piscina con bar.

Che dire, il top! Se volete rilassarvi e godere di una vista magnifica, questo è il posto giusto. Il resort è immerso nel verde. La struttura è bellissima, pensata e curata in ogni minimo dettaglio. Le camere sono ampie e pulitissime. La cucina ottima ed espressa. Cinzia, una perfetta padrona casa, e Daniele, ci hanno accolte con grande gentilezza e disponibilità, facendoci sentire coccolate e tra amici. Grazie!

Non è solo il posto meraviglioso, immerso nella natura, curato nei minimi particolari, con delle villette dotate di ogni confort a meritare un soggiorno in questa magnifica struttura, ma anche e soprattutto la gentilezza e disponibilità di Cinzia, la proprietaria, che ci ha accolto come se ci conoscesse da una vita. Simpaticissimo anche lo chef e sommelier Daniele, sempre pronto ad accontentare ogni richiesta e a proporre piatti sempre diversi, grazie a ciò che viene prodotto in questo resort, come l'olio, gli ortaggi, i salumi, la carne, il vino. Eccellente il servizio grazie alle attenzioni e alla professionalità di Anna. Ci torneremo sicuramente, perchè il soggiorno in questo splendido posto, non può essere solo un piacevole ricordo!
